These cupcakes were born from a memory of my grandma Lucille's homemade Red Velvet cake with cream cheese icing. A hint of cocoa adds just the right amount of flavor to these moist, scarlet cupcakes. I baked these for my grandpa Jack's 87th birthday, hoping they'd remind him of my sweet grandma Lucy. Took the rest of them to work and they didn't last long!
