Mint to Be

As a tribute to my dear Pop's birthday I made my "Mint to Be" cupcakes to pay homage to one of his favorite cookies...in cupcake form. Delicious dark chocolate cake topped with a light mint buttercream and topped with one of the famous fudge mint cookies we all dream of. Dad loved them so much he had two, but made me leave a few extra before I left, too :)
