Merry Christmas

Long time, no goodies! That's about to change. I was busy, busy, busy baking and concocting all kinds of sweet treats for Christmas.

Tickled Pink

For the 4th of July my husband and I had a get together with family and friends. Naturally, I made cupcakes but couldn't decide which new cupcake to try. So, my husband inspired this creation of a light and fluffy yellow cake filled with a fresh strawberry puree and topped with a strawberry cream cheese frosting. Light and airy enough for the July heat with just the right amount of sweetness from the strawberries and flecks of vanilla bean. I call this one Tickled Pink. :)

Lollicakes

Just in time for Easter, these adorable baby chicks made their debut. Strawberry cake pops surrounded by vanilla candy coating on a lollipop stick. They were even packaged up and put on display...they tasted even better than they looked!

Lunch Date

I'm a sucker for anything peanut butter related. In fact, I haven't met an item containing peanut butter that I didn't like- because let's face it, peanut butter goes with almost anything, right?? Of course there are delectable combinations like chocolate and peanut butter (be still my heart) and then there's the original combination of the tried and true PB&J sandwich. Thus, the inspiration for my latest cupcake, the lunch date. I don't know many kids who haven't opened their lunchbox to find a PB&J sandwich inside at some point in their lives. I still enjoy a good PB&J and this cupcake was no different! A moist, dense peanut butter cake filled with strawberry preserves and topped with a whipped peanut butter cream cheese icing and a little dollop of preserves on top. WOW! I think this may be one of my favorite cupcakes so far. It's hard to eat just one!

Cherry Cordially Yours

I never much cared for cherry cordials until I tried one homemade...that changed it all! Mostly, my younger bro had a craving for these cherries almost anytime. In fact, a box would often be wrapped under the Christmas tree during the holidays! So, for his bday I decided to make him my cupcake-version of his favorite confection and it was a smash-hit. In fact, my step-son couldn't help but devour all the leftover cupcakes, icing-first! You should have one...or two, or a dozen. It's a devil's food cake with a maraschino cherry tucked inside, topped with a maraschino cherry buttercream and then dipped in a velvety chocolate ganache. And don't forget about the cherry on top! Decadence? Yes, please. :)

Raspberry Beret

To celebrate Valentine's Day along with my husband's birthday, I wanted something that was both sweet, tart and seductively rich. The cupcakes delivered. A deep chocolate cake filled with a sweet and tart raspberry filling topped with chocolate ganache and a dollop of a raspberry cream cheese icing. Divine!
